Ivalu grew up immersed in gastronomy, the daughter of Gastón and Astrid Acurio, and trained at both EHL in Switzerland and Le Cordon Bleu in Japan. A chef and culinary strategist, she has developed restaurant concepts of her own while also advising on Poincaré’s project on recipe creation, kitchen design, and OS&E selection.
Within Poincaré, Ivalu brings a rare mix of creativity and pragmatism — moving seamlessly from dish development to equipment planning, always with an eye for detail and authenticity. Her wild yet kind spirit makes her not only a trusted professional but also a cherished friend, infusing our projects with both expertise and heart.
